Is installation complicated? Do I need to disassemble the car or modify the wiring? How do I set up the adapter for the first time? Do I need to set it up every time? Is there a recommended startup order? Why doesn't the adapter connect sometimes?

Can I switch between different phones?

Yes.
Most adapters can remember multiple paired devices.
To switch phones:
  1. Disconnect the currently connected phone or turn off its Bluetooth and Wi-Fi.
  2. Connect the other paired phone.
  3. The adapter will connect automatically or allow you to select the desired device, depending on the adapter model.
